Most of all recipes are rich with spice ingredients like candlenut, chili pepper, galangal, lemongrass, ginger, turmeric , coconut , palm sugar, etc  follow with the culinary art techniques  based on its regional indigenous culture as well as foreign influences, such as  India, China, Middle East and Europe. Sumatra cuisines, for instance , their techniques were influenced by India and Middle East using curry on the meat or vegetables. Indonesian dishes often demonstrate complex techniques. for instance ;  uncooked rice is not necessarily will be processed and served as just white rice but  can be processed to be ketupat using the woven coconut leaves technique, lontong with the banana leaves technique or nasi goreng using a frying technique, etc.
Rice normally serves as the staple for the majority of Indonesian people. And tapioca, corn, cassava or sweet potato for those who live in the eastern Indonesia, usually serves with other dishes such as fish, meat or vegetables.

Nasi Goreng, Sate , Gado-Gado, Soto are considered as a National dishes. Tumpeng was chosen by The Indonesian tourism Ministry as the official national dish that unites the diversity of Indonesia’s traditional cuisine in 2014.

Some other popular Indonesian meals like Sate, Rendang, Sambal and fermented soya beans-based such as tempeh and tofu (tahu) have  gone international .

During the family meal, members of the family gather around and form a circle whether sitting on the chairs or sitting on the floor covered with carpet or tikar (plaited mat) and the dishes will be served in the middle.
The meal usually initiated first by the eldest member of the family or the husband then followed by the rest of the family. The individual normally take their staple (rice) first then the side dishes like vegetables, soup, fish , meat or chicken .Whatever the meals are, it’s common to always accompany by relish or sambal and crackers (kerupuk). Don’t be surprised to see a full single plate mixed with different kind of dishes . You will find this common practice in Nasi Padang, Nasi Rames, Nasi Campur or during buffet or Prasmanan.

Rendang – Sumatra Cuisine

Indonesian food is normally eaten with a spoon on the right hand and fork on the left hand , often they only use a spoon. However, it is normal in some customs  like Sumatra and Java to eat with bare hand. This practice can also be found at Traditional Restaurants such as Sundanese, Javanese or Padang Restaurants. Places like this usually serve their meals with kobokan, a bowl of water with a slice of lime in it to be used to wash hand before or after meal. Chopsticks are often used in Indonesian restaurant influenced by Chinese that serve bakmi or mie ayam (chicken noodles) , mie goreng (fried noodles), and pangsit (wonton)

The meals are usually prepared and cooked in the late morning to be served on mid day, but actually there is no set time for meal, therefore, all meal cooked so that they can be left at room temperature for many hours without being spoiled. For the final meal in the evening the same dishes normally re-heated.
